PORCINI MUSHROOM SOUP

Ingredients:
1 onion
150 g porcini mushrooms
50 g potatoes
1.2 liters vegetable broth
A pinch of salt
Pepper

Preparation: Finely chop the onion and sauté it in oil until golden yellow. Add the cleaned and sliced porcini mushrooms. Pour in the broth and simmer for about 30 minutes. Grate the potato finely and add it to the pot, cooking for another 10 minutes until the potato releases its starch. Season with salt and pepper, then blend everything with an immersion blender to your desired consistency. If desired, add a bit of cream when serving the soup in bowls. Enjoy your meal!
