Steak Tartare
(Recipe provided by the Minerva restaurant in Varaždinske Toplice)
Ingredients:
- 200 g beef fillet (steak)
- 10 g salted anchovies
- 50 g mayonnaise
- 10 g pickles
- 30 g mustard
- 0.5 g chili peppers
- 0.5 g capers
- 20 g onion
- 0.5 g parsley
- 0.5 g salt
- Ground red paprika
- Worcester sauce
- Tabasco sauce
- Lemon juice
- Ketchup
- Butter
- Toasted bread
Preparation:
- Marinate the beef in a mixture of mustard and oil for at least 48 hours.
- After marinating, cut the meat into strips with a sharp knife, then finely chop the strips into minced meat. Continue chopping until it reaches your desired texture.
- In a separate bowl, mix the mayonnaise, mustard, ketchup, lemon juice, finely chopped pickles, anchovies, capers, onion, parsley, chili peppers, Tabasco sauce, Worcester sauce, red paprika, and salt. Adjust the seasoning to taste.
- Combine the minced beef with the prepared mixture and mix everything thoroughly.
- Serve the steak tartare on an oval platter with butter or spread it on toasted bread.
