Pork Belly with Pumpkin Seeds
(Recipe from the Bedem Restaurant in Varaždin)
Ingredients:
- 800 g pork belly
- 100 g pumpkin seeds
- 100 g carrots
- 100 g celery
- 100 g onions
- 30 g garlic
- 50 ml oil
- Thyme
- Salt
- Pepper
- Bay leaf
Preparation:
- Shape and flatten the pork belly, season with thyme, salt, and pepper, then roll it up.
- Place the rolled pork belly in a baking tray with carrots, celery, onions, garlic, and bay leaves.
- Add oil and water, then slow roast at 140°C for 3 hours.
- Once the meat is cooked, slice it, roll the slices in pumpkin seeds, and toast in the oven at 200°C for 5-7 minutes.
- Serve with a vegetable or mashed potato side.
